Aquí muestro los beneficios que ofrece esta hoja, que parece ser de textura un poco fuerte, tal vez haya que cocinarla un poco, como hacen con la espinaca.  Hago un llamado al Departamento de Agricultura de PR, para que muestre un poco de interés en estos temas, ya que tenemos bastante lugares todavía para sembrar, y entiendo que este vegetal puede darse en el clima de aquí (si se da la lechuga y muchos parecidos) y comienzen a hacer una siembra, que provee empleos, y provee alimento autosustentable para PR. Todos los ojos, mentes, manos, está dirigido a política, a los gays, a las matanzas diarias, y nos olvidamos de cosas como estas, que son bastante importantes y nos concierne a todos.Hace un tiempo nos visitó un universitario de Africa, y se asombró de todas las plantas que vio sembradas en PR y que NO consumimos y que desconocemos su valor alimentario, y utilidad.  Yo no lo hubiera dejado ir de PR, a este caballero, sin que nos documentara su información, y hasta nos diera un seminario de un par de horas a las personas a cargo de tomar decisiones en la agricultura.  Hay personal en el Jardín Botánico, área enfrente de esas facilidades, que están preparados para aportar información y proyecciones a los dueños de terrenos. En el día de ayer, entré en la computadora unas instrucciones de cómo se siembra un aguacate. No es tan fácil como meter la semilla en la tierra. Hay que documentarse, y no es una ciencia. Quiero escuchar que se está haciendo, en estos momentos en que el dinero falla, y dependemos cada vez más de los barcos de suministros.

  The USDA’s new food pyramid (MyPlate) suggests the healthiest choice is making vegetables and fruit the biggest part of every meal by reducing consumption of animal proteins. Kale is far more nutritious than other leafy greens, but these seven reasons why it is such an important futurefood may just surprise you.

1. Anti-inflammatory: Inflammation is the number one cause of arthritis, heart disease and a number of autoimmune diseases, and is triggered by the consumption of animal products. Kale is an incredibly effective anti-inflammatory food, potentially preventing and even reversing these illnesses.
2. Iron: Despite the myth that vegetarians are anemic, the number of non-vegetarians with iron-deficiencies is on the rise. Per calorie, kale has more iron than beef.
3. Calcium: Dairyand beef both contain calcium, but the U.S. still has some of the highest rates of bone loss and osteoporosis in the world. Kale contains more calcium per calorie than milk (90 grams per serving) and is also better absorbed by the body than dairy.
4. Fiber: Like protein, fiber is a macronutrient, which means we need it every day. But many Americans don’t eat nearly enough and the deficiency is linked to heart disease, digestive disorders and cancer. Protein-rich foods, like meat, contain little to no fiber. One serving of kale not only contains 5 percent of the recommended daily intake of fiber, but it also provides 2 grams of protein.
5. Omega fatty acids: Essential Omega fats play an important role in our health, unlike the saturated fats in meat. A serving of kale contains 121 mg of omega-3 fatty acids and 92.4 mg of omega-6 fatty acids.
6. Immunity: Superbugs and bacteria are a serious risk to our health. Many of these come as a result of factory farm meat, eggs and dairy products. Kale is an incredibly rich source of immune-boosting carotenoid and flavanoid antioxidants including vitamins A and C.
7. Sustainable: Kale grows to maturity in 55 to 60 days versus a cow raised for beef for an average of 18-24 months. Kale can grow in most climates and is relatively easy and low impact to grow at home or on a farm. To raise one pound of beef requires 16 pounds of grain, 11 times as much fossil fuel and more than 2,400 gallons of water.

Not only is Big Brother’s surveillance leviathan growing larger by the day but it has become a most arrogant creature as well, operating at will against the people – or, perhaps more appropriately in this case, operating against the will of the people.

The latest example originates in Florida, where a school district scanned and cataloged the irises of hundreds of students without the permission of their parents.

According to TheLedger.com:
The unraveling began in late May, when the Polk County School District sent home a letter to parents. A new pilot program, it explained, will track bus riders using a feature unique to every child – their irises.
Parents could opt out, but by the time they learned about it, a company named Stanley Convergent Security Solutions had already captured images of about 750 children’s eyes.

Immediately upon discovering what had occurred, school officials both halted the pilot program amid a torrent of parental complaints and blamed their failure to notify parents ahead of time to a “clerical error.” Rob Davis, district administrator for transportation and school security departments, said his secretary emailed the parental notification letter late to principals, who then would have sent it onto parents.
There was more to it than that, however. According to TheLedger.com, emails sent between other district staffers – in addition to interviews the paper conducted with administrators – indicate that the late letter “was only one of multiple behind-the-scenes mistakes that left parents and some top school administrators in the dark, allowing a company to collect children’s biometric information without the parents’ knowledge.”
According to the records:
– Under terms of the pilot program, it would have remained in operation at no cost to the school district for 60 days, though that still required a contract. However, district staffers permitted Stanley Convergent onto three separate school campuses and allowed them to scan the irises of children before a contract was ever finalized;
– Interim school superintendent at the time, John Stewart, was to have final approval over the contract. As Stanley Convergent prepared to begin collecting iris scans, Davis told staffers to send Stewart the contract, but it never made it to Stewart, meaning the district’s top official did not learn about the program until the scans had already taken place;
– In addition, members of the district’s staff never discussed the program with Stewart in person. That includes Lum Thornhill, assistant director of operations, as well as Ann Marshall, “a safe schools specialist who is also assigned to the superintendent’s office to handle public records requests.”
The excuse offered for this rash of failures borders on the criminal.
“It’s just a busy place,” Marshall told TheLedger.com. “And unless you have an appointment to move something ahead, it’s not like you have an opportunity to chitchat. It’s not that anyone didn’t want to tell him (Stewart).”
And yet, had the process been followed, said Wes Bridges, an attorney for the school board, the iris scan program would have been stopped until parents could have been notified.
“It was almost a comedy of errors,” Bridges said – only there is nothing funny about collecting the data of children without permission.
‘They have no concept of what they’ve done’
Many parents whose kids were caught up in the “comedy of errors” weren’t laughing either – or buying the excuses.
Connie Turlington, who was upset that her 11-year-old son was scanned, said what happened did not appear to the outsider as a coincidence. “It sounds like a simple case of it’s better to ask forgiveness than permission,” Turlington told TheLedger.com.
April Serrano, whose eight-year-old son was scanned at a district school, was angry. “They have no concept of what they’ve done here,” Serrano said. “I feel like my son’s civil rights were violated.”
Thus are the pitfalls of the rising surveillance leviathan – arrogant, dismissive and getting larger every day.

En conferencia de prensa, el canciller arremetió contra las demandas de extradición de Estados Unidos y las advertencias de consecuencias negativas si Moscú no hace caso.
Lavrov agregó que acusar a Rusia de "violar las leyes de Estados Unidos e incluso algún tipo de conspiración" respecto de Snowden es "absolutamente inaceptable e infundado".
El funcionario no especificó la ubicación del exempleado la CIA, quien reservó un vuelo a La Habana desde Moscú el lunes por la noche, pero no se presentó en el avión.

Every year, California’s community health clinics are required to report important data to the state, including details about their finances, their patients and the type of care they provide.
But county-run health clinics, a key piece of the state’s health care safety net, don’t have to do the same.
"It’s definitely a gap,” said Jonathan Teague, manager of the Healthcare Information Resource Center at the Office of Statewide Health Planning and Development (OSHPD).
That and other gaps in state health care data could gain more significance as the state implements President Obama’s health care law.

They ranged from the California Medical Association, a professional organization that represents the state’s doctors, to the California Primary Care Association, which represents community clinics.

Which state laws will stand – or fall – if the Supreme Court strikes health law down?

As I reported earlier this week, California rushed to implement the Obama administration’s health care overhaul after it passed in 2010, adopting about 20 state laws that replicate or build on the federal measure.
They range from a law that created a state health insurance exchange to one that requires insurers to cover maternity-related services in the individual market.

Fact: Dental managed care is voluntary in Los Angeles County and parents must actively sign their kids up for the program. If they don’t, children default into the traditional “fee-for-service” system.
Question mark: Given that this poor-performing program is voluntary, how did 154,000 kids get on it in the first place? And why do they stay?

Not all children's groups oppose Healthy Families transition

As the Legislature debated – and ultimately approved – a budget-cutting plan to transfer nearly 900,000 California children on the Healthy Families program into Medi-Cal next year, dozens of groups joined in opposition.
They ranged from the California Medical Association, a professional organization that represents the state’s doctors, to the California Primary Care Association, which represents community clinics.
Mostly, they were groups that focus on children and families, such as Children Now and United Ways of California.
They warned that the transition could disrupt care for thousands of children and ultimately lead to a lack of access to care, particularly in parts of California where doctors – especially those who accept Medi-Cal – are scarce.
But it turns out that opposition to the proposal was not unanimous, even among nonprofits that advocate for children and families.
“We were supportive of what happened,” said Vanessa Cajina, a Western Center on Law & Poverty lobbyist who focuses on health-related budget items.
First, a little background. Medi-Cal is a public health insurance program for the lowest-income Californians. Healthy Families covers children in families with incomes too high to qualify for Medi-Cal, up to 250 percent of the poverty level.
Under the transition plan that the Legislature agreed to, 415,000 Healthy Families children will move to Medi-Cal on Jan. 1, 2013, with the remainder making the move later in the year. (Check out this fact sheet from the Legislature for more details on the transition.)
Cajina said her group supports the transition, in part, because Medi-Cal covers a broader array of medical services for children than Healthy Families, a point echoed by Lynn Kersey, executive director of Maternal and Child Health Access.
Kersey pointed to a benefit under Medi-Cal called Early and Periodic Screening, Diagnosis and Treatment, which she said mandates that “any service a child needs that is medically necessary must be provided. If a plan doesn’t have that in its package, there are outside services that have to be included.”
As a result, she said, treatment options for certain medical issues, such as mental health and orthodontia, are better under Medi-Cal than Healthy Families.
Norman Williams, spokesman for the state Department of Health Care Services, which administers Medi-Cal, provided another example.
“Chiropractic treatments are limited under Healthy Families to a certain number,” he said. “Under Medi-Cal, children can go beyond the limit if there is a medical necessity identified.”
Cajina and Kersey also said that families will save money with the transition to Medi-Cal. Healthy Families children pay premiums on a sliding scale and children with Medi-Cal do not.
“For children in Medi-Cal under 150 percent of the federal poverty level, there won’t be any cost sharing or monthly premiums, which they had in Healthy Families,” Cajina said.
Cajina and Kersey noted other issues that bolster their support for the transition, such as increased efficiencies and more due process rights for participants. Both also agreed that access to care under Medi-Cal will be a continuing concern.
But “if everybody is in the same program, we’re all fighting for the same improvements,” Kersey said.
Mike Odeh, senior health policy associate for Children Now, said he agrees with the points that Cajina and Kersey make, but worries more about access to care.
“If kids don’t have access to care, then who cares if they’re paying a premium or not? … We’re concerned not just about the kids in Healthy Families who will move to Medi-Cal and their access to care. We’re also concerned about the kids who are already in Medi-Cal,” he said.
Odeh pointed out that under the transition, the rates that plans received to provide coverage under Healthy Families will drop to Medi-Cal levels, which may result in providers dropping out of the program.
“What happens when you add almost 900,000 more kids to a system that is in some ways fractured?” he asked. “We want to make sure we don’t do that and can strengthen the Medi-Cal program before we do this transition.”

Need a list of non GMO companies? We’ve put together one and include tips on where you can go to buy non GMO products. In many cases these non GMO companies sell products in your local box store. Some of these products are naturally gluten free, and some are not.

1. Amy’s Organics:

Amy’s sells both gluten free and products that contain gluten. You can find Amy’s frozen entrees and canned goods at places like Jewel Foods, Dominicks, Walmart, Peapod, and Whole Foods. This is a widely distributed brand of vegetarian foods. There are no meat, eggs, fish, or poultry are in any of their products. They do use dairy, however.

2. Applegate Farms:

*update 5-29-13* UndergroundHealth.com recieved an email clarifying a few things regarding Applegate Farms’ products being 100% GMO free. Their line of “organic” products is 100% GMO free as expected. However, a few of their “natural” line of products we’re found to have GMO ingredients which they are working “agressively” to remove as quickly as possible. For this list email the company from their website. They have assured us they will have all of their products 100% NON-GMO asap. They are a stand up company who is on the forefront of becoming 100% GMO free as a whole, not just their “organic” product offerings. Please note – Applegate is also listed on the “Printable list of brands below”.

Applegate Farms Organics sells mainly frozen and fresh meat products and cheeses. They have both gluten free and products that contain gluten. You can easily find Applegate Farms Organics products at places like Kroger’s, Jewel Foods, Trader Joe’s, Peapod, and Whole Foods. They have a product locator page which makes shopping very convenient, too. Visit the link to check off what you want to buy and enter your zip code. You’ll get a list of local stores that carry it. They also have an online store. Applegate Farms does not guarantee their Naturals line is non GMO.

3. Ciao Bella Gelato:

Need a dessert brand that is healthy, free from high fructose corn syrup and non GMO? You need to try a dairy free sorbet from Ciao Bella Gelato. Local Chicago area readers can buy Ciao Bella at Super Target, Whole Foods, and Peapod. They are at Safeway stores and you can even buy them online.

4. Earthbound Farm:

This is one of the most popular non GMO companies. Earthbound sells fresh grown vegetables, fruit, granola, cookies, etc. Not all of their products are gluten free. You can get their lettuce greens and spinach in plastic containers at Jewel Foods, Dominicks, Super Target, Walmart, Super Kmart, Whole Foods, Peapod, and Costco. There’s a complete list of stores on their website. They also have frozen fruit, dried fruit, and snack products as well. Their Dipping Doubles are perfect for lunchboxes.

5. Earth Balance:

If you are looking for non GMO soy products, Earth Balance is a great brand. Not all their products are non GMO verified, but they are working on additional products. You can find many Earth Balance products at Whole Foods and other area health food stores. The soy free buttery spreads are sold at most local grocery stores including Dominicks, and they are available at Peapod. Are you an Amazon.com shopper? They have select varieties of peanut butter for sale.

6. Eden Foods Organics:

This is one of our favorite non GMO companies. At one time Eden Foods was not visible in the local grocery store. Today Eden Foods can be found at local Jewel Foods, Pete’s Fresh Market, as well as local health food stores. The biggest selection of their products is at Whole Foods. If you are not in the Chicago area, visit their store locator page to find a store near you. They sell a wide variety of canned products in BPA free containers, dried goods, snacks, tomato sauce products, condiments, fruit products, and whole grains. 7. Lundberg Family Farms:

Lundberg sells a wide variety of rice products. Allergic to MSG? None of their products contain hydrolyzed vegetable protein. They carry vegan, kosher, and gluten free labels on various products. You can get organic rice cakes, organic brown rice syrup, organic rice couscous, organic MSG free risottos, organic rice chips, and organic rice. Where to buy? Get it at Meijer, Jewel Foods, Ultra Foods, Walmart, Whole Foods, Peapod, and Super Target. It’s also sold at many smaller food markets and health food stores nationwide. 8. Mary’s Gone Crackers:

This gluten free non GMO company sells cookies, crackers, pretzels, and crumbs. Local Chicago area consumers can find this brand at Jewel Foods, Peapod, Ultra Foods, County Fair, and various health food stores. 9. Nature’s Path:

This non GMO company has a wide range of cereal products, toaster pastries, granola bars, oatmeal products, and even high protein chia products. They have a special section for gluten free products on their site as well. Find them at Peapod, Jewel Foods, Walmart, and various health food stores. You can also buy them at Amazon.com.

10. Organic Valley:

Organic Valley products can be found at most local retailers in the Chicago area. Local readers can find this brand at places like Trader Joe’s, Walmart, Dominicks, Peapod, and Jewel Foods. The widest variety of their products can be found at Whole Foods. This non GMO company sells milk, cream, yogurt, cream cheese, cottage cheese, sour cream, and butter. They’ve also got various cheese products, organic non GMO soy products, juices, eggs, and produce. They also carry beef, chicken, pork, and turkey products. Gluten free shoppers need to check out their gluten free products listing.

11. Pacific Foods:

There aren’t many non GMO companies that sell broths. Pacific Foods is one of them, and they can be found online through Peapod. Pacific Foods does not use MSG in their products. They sell vegetable broths, chicken broths, and beef broths. They have a wide variety of cream soups, carton soups, and condensed soups. This is the brand you want for non GMO cream of mushroom soup. Pacific Foods also has non GMO nut and grain drinks. During the holidays you can get cranberry sauce and pumpkin puree from Pacific Foods. Gluten free and food allergy shoppers need to see their page on special diets to find safe products. Don’t shop Peapod? Try Whole Foods or Amazon.com.

12. Spectrum Organics:

Looking for non GMO companies that make healthy oils? Spectrum Organics is a great non GMO brand. Healthy dieters are often told to use Canola oil when cooking. Unfortunately, canola oil is commonly made with GMO canola. Spectrum Organics carries non GMO organic canola oil, organic flax oil, organic olive oil, and organic mayonnaise made with olive oil. Spectrum is one of our favorite non GMO companies. They sell products at Meijer, Dominicks, Super Target, Kroger’s, Peapod, and Whole Foods. Locally, we buy ours from Lil’s Dietary Shop in Beverly. Visit their store locator page to find out where to buy. They also sell palm oil, which is a great substitute for butter in baked goods. Do you use Crisco oil or margarine? Start using Spectrum Palm Oil or Coconut Oil instead.

13. Stonyfield Organic:

This company is one of the pioneers in non GMO labeling and sustainable farming. They sell yogurt, milk and cream, frozen yogurt, ice cream, and non dairy cultured soy yogurt products. Stonyfield can be found at nearly every large national chain store in the U.S. Stonyfield is found at Meijer, Dominicks, Super Target, Kroger’s, Peapod, and Whole Foods.

14. Simple Truth and Wild Harvest:

In addition to these major organic and non GMO companies, both the Super Valu and the Kroger grocery stores have private label organic brands. Super Valu has several chain stores that carry their Wild Harvest organic foods label. These chains are: Acme, Albertson’s, Bigg’s, Cub Foods, Farm Fresh, Hornbacher’s, Jewel-Osco, Lucky, Shaw’s/Star Market, Shop ‘n Save and Shoppers Food & Pharmacy. Kroger also has several chain stores that carry their Simple Truth organic label brand.

If you are shopping for Simple Truth and Wild Harvest be sure you are buying food with organic written on the label. There is a MAJOR difference between the two labels. Foods marked as natural are not regulated. This means that they can contain pesticides and GMO ingredients in them. This can be quite tricky when you are shopping, so always look for the label.
